In the saucepan over medium heat, sweat the onion with celery, and red bell pepper in 1 tablespoon olive oil. .
Stir in the garlic
Stir in the beans (do not drain or rinse) with the cumin, oregano, sherry and salt.
Simmer on low for 15 minutes. If it looks too dry add some chicken broth.
