Energy Bites Recipe (Trail Mix Variation)

Ingredients

  • 1/2 cup oats
  • 1 1/2 cup pretzels gluten-free and crushed into crumbs
  • 1/2 cup chocolate chips mini
  • 1/2 teaspoon salt coarse kosher
  • 1/3 cup flax seeds ground
  • 1/4 cup chai seeds (optional)
  • 1/3 cup honey
  • 1/2 cup peanut butter creamy

Instructions

  1. In a large bowl, mix together the oats, pretzel crumbs, mini chocolate chips, salt, flax seeds, and chia seeds (if using).

  2. In another bowl, thoroughly combine the honey and peanut butter.

  3. Add the honey peanut butter mixture to the other ingredients, and stir well.

  4. Refrigerate for 1 hour.

  5. Scoop a bite-size amount of the mixture and roll it into a ball. Repeat.

  6. Store Energy Balls in an air tight container for up to 10 days in the refrigerator.
