Research Validates Antimicrobial Properties of John Boos & Co. Wood Cutting Boards

Since 1887 professional chefs, butchers, and millions of home cooks have been using beautiful Northern Hard Rock Maple cutting boards by John Boos & Co. enjoying their superb practicality and excellent functionality.  However, just this summer new research has been published that adds further credibility to the hygienic benefits of these boards.

This study was conducted by Mechanical Science and Engineering Professor Nenad Miljkovic and his research laboratory at the University of Illinois.  The research shows that the NSF listed Northern Hard Rock Maple cutting boards by Johns Boos & Co. kill bacteria.

Data gathered by the team concluded that application of the NSF listed Boos Block Mystery Oil and Board Cream on the boards created an “antimicrobial, hydrophobic surface that decreased their surface bacteria to a ‘clean level’ in just 3 hour” without using recommended board cleaning procedures.

However, proper board cleaning procedures are still recommended to maintain the board’s surface.

How to Clean your John Boos cutting board

  1. Wipe the board down with a clean disposable towel after each use to remove food and liquids from the surface.
  2. Rinse the board with warm soapy water 
  3. Dry immediately with a clean cloth
  4. Reapply a layer of Boos Block Mystery Oil followed by a layer of Board Cream (at least once a month). 

Boos Block DONT’S!

  1. Never wash a wood cutting board in a dishwasher.
  2. Never immerse it in a sink full of water.

Why I Like the iBlocks So Much

If you’re like me and you like to watch movies while you cook or follow along with your favorite TV or YouTube chef or if you just like to use your iPad for looking up online recipe, this Boos iBlock is awesome.

It comes in 2 styles, the iBlock and the iBlock Pro.  The iBlock has a detached base for your tablet or iPad and the iBlock Pro is all one piece. (Smart phones slip into the groove nicely too!)

I like the 2 piece iBlock because the board is compact and I can move it around & wash it off without touching my iPad.  Then it stores easily when you’re not using it.

Plus, it comes in maple, cherry, and walnut.  All the wood varieties Boos uses for all of their cutting boards are great because they are sustainable forested, made in the U.S.A., and won’t blunt your knife blade like a bamboo or plastic cutting board.

I like the all inclusive iBlock Pro (this month’s giveaway!) because it is a little larger and I don’t have to worry about 2 pieces getting separated from each other.  The other thing that’s really nice about this board is the trough (see below).  If I’m cutting something that’s juicy, those juices are going to run right into it not on to my counter or my iPad.

Now another thing I like about both of these styles, is they have finger niches underneath that make them easy to pick up and put down.

Pro Tip:  Consider using one cutting board for fresh produce and bread and a completely separate one for raw meat.  This will cut down on the risk of cross contamination.
