Women on the Verge of a Nervous Breakdown, written and directed by Pedro Almodovar, is a seriously funny film. I can’t eat gazpacho without thinking about it. In the movie, the wife and mistress, plot to “do away with” their cheating husband/boyfriend with a killer gazpacho.

For those of us who don’t speak Spanish, I’ve included my version of this killer concoction (minus the sleeping pills, thank you very much) below. Traditional gazpacho uses stale bread, but I leave it out to keep it low carb.
Easy and Easier…
I also like to use fire roasted canned tomatoes. They are an easy “go to” if you don’t have an abundance of the fresh home grown variety. Glen Muir has a wonderful flavor and doesn’t disappoint. Don’t forget to top it off with a squirt of lime and a dash of Tajin. Tajin is a lime chili salt sprinkle that really gives it a “zing!”

Tajin is also great on salads, chili, pork, grilled veggies, chicken, etc.
Gazpacho is quick, easy, and super yummy! I think it’s the perfect summer drink and/or soup. It’s refreshing, healthy, and deeply satisfying. It can be made mild or spicy depending on how you like it.
The Presentation of the Gazpacho
Presentation is everything! Drink it as a smoothie or eat it as a cold soup by serving your gazpacho in a tall pretty glass or a simple bowl. It’s vibrant color speaks for itself. But if you’re feeling creative try putting the red gazpacho in a hollowed out zucchini cup or a sweet bell pepper.

This is an especially great use if your zucchinis get over grown to ginormous size! Play around and make it fun! 🙂

Gazpacho to Die For Recipe
This gazpacho recipe is from the Spanish movie Women On the Verge of a Nervous Breakdown. The recipe and the movie are definitely worth checking out, but without the sleeping pills! 😉
Ingredients
- 2 medium tomatoes chopped
- 1 can fire roasted tomatoes diced
- 2 red bell pepper chopped
- 1 cucumber peeled, seeded, chopped
- 1/2 cup olive oil
- 2 cloves garlic
- 1/4 cup sherry
- 1/4 cup red wine vinegar
- 1 small red onion chopped
- 2 teaspoons salt
Equipment
- measuring cups & spoons
- knife and chopping board
- blender
Instructions

Put all ingredients into the blender. Blend until smooth.

Chill for at least 1/2 hour. Garnish with cilantro, Tajin,lime, and sour cream.
Recipe Notes
Sleeping pills are NOT recommended.
