This Cowboy Salsa is an irresistible mix of zesty, fresh, and hearty flavors!

Ingredients

  • 1 14 ounce can black eye peas drained and rinsed
  • 1 14 ounce can black beans drained and rinsed
  • 2 green bell peppers diced
  • 2 red bell peppers diced
  • 3 cups corn shoe peg
  • 3 tomatoes diced
  • 2 cans Rotel tomato and chilies
  • 1 medium onion minced
  • 2 avocados diced
  • 1 cup Zesty Italian Dressing

Instructions

  1. Mix together the black-eyed peas, black beans, green and red bell peppers, tomatoes, corn, Rotel, and onion in a large bowl.

  2. Stir in the zesty Italian dressing until everything is evenly coated.

  3. Dice the avocados and gently fold them in right before serving to keep them fresh.

  4. Serve with bite-sized corn chips and enjoy!
