Cooking with kids is a lot of fun especially with this Turmeric Honey Glazed Carrot recipe.  Cooking for kids can be a real challenge.  Their taste buds are young and are super receptors.  The acidity of a tomato, the bitter skin of a carrot, and the sourness of a pineapple can be so powerful it hurts.  I get it.  I had a hard time with tomatoes as a child.  Now, I believe them to be blushing demigods of the garden.  Especially the ones grown in the Firefly Grill garden!  Super YUM!

On the other hand, sweetness explodes like confectionary fireworks for kids.  Not to mention the sugar rush and euphoria that follows that can send them into orbit for over an hour only to come crashing down in a Crankisorus* heap.  Children are more visual than adults too and have a sense of play I cherish.  Making colorful dishes and whimsical plate scenes generally go over well.   This doesn’t mean every plate should consist of hotdog octopi, fairyland garden scenes and eggs over my hammy happy faces, but every now and then if you’re up for it, it’s fun.

The Carrot Challenge

I love carrots but my youngest granddaughter, Rylin (age 4), hated them until recently.  I am truly blessed with a family of adventuresome eaters.  Thank God!  If I wasn’t, I don’t think I would have ever progressed past Hamburger Helper and the 8th wonder of the world: Kraft macaroni and cheese.  But when I come across something my gang doesn’t like, I can’t help but view it as a bit of a challenge.  “How can I prepare __X__ so they like it?”  

For Rylin, carrots were her nemesis.  Typically, I leave the skins on because they’re so nutritious, but they can be bitter.  Yes, I bet I could have won her sweet little heart over with carrot cake.  I mean, come on, what’s not to love about carrot cake?  But I wanted her to look that carrot straight in the face and make friends.  That’s when I started thinking about this Turmeric Honey Glazed Carrots recipe.  Ok, ok, ok… bringing honey to the party is not playing fair, but we’re building bridges here.

Ingredients

  • 8 medium carrots peeled and cut into wide match sticks
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 2 teaspoons turmeric
  • 1 teaspoon fresh ground pepper
  • 1/3 cup honey
  • 1 inch ginger peeled and grated
  • 1/2 lemon zested and squeezed
  • 1/3 cup fresh parsley chopped

Instructions

  1. Melt butter over low to medium heat in a skillet.
  2. Put carrots into skillet and coat with butter and add salt.
  3. Gently saute for 2 minutes and add the turmeric, black pepper, honey, and ginger.
  4. Increase heat to medium high for 3 more minutes.
  5. Remove from heat, top with lemon zest, lemon juice and parsley.
  6. Serve and enjoy!
