Breakfast Rice Casserole

This is a wonderful savory GLUTEN-FREE addition to a breakfast brunch buffet when the holidays hit or if you're feeding lots of people. Make it a day ahead and it's even better!

Ingredients

  • 2 pounds sausage Italian or regular
  • 1 pound sausage hot/spicy
  • 1 large red bell pepper chopped
  • 1 large onion chopped
  • 9 cups water boiling
  • 2 packages lipton chicken noodle soup
  • 1 cup almonds sliced or slivered
  • 3 cups rice

Instructions

  1. Brown and drain the 3 pounds of sausage and set aside.

  2. Add the onion and bell pepper to the pan that the sausage was cooked in and cook over medium heat until soft.

  3. While the onions and bell pepper are cooking, add the 2 Lipton chicken noodle soup packages to the boiling water and stir until dissolved.

  4. Add the 3 cups of rice to the boiling water, cover, reduce heat to a simmer, and cook rice for 20 minutes.

  5. While the rice is cooking, lightly toast the almonds in a dry skillet. Watch carefully. They burn easily.

  6. Drain the rice.

  7. After draining the rice, mix together the rice, sausage, onion, and bell pepper in a large bowl.

  8. Transfer the rice mixture to a serving dish and mix in the toasted almonds right before serving.
